Description

Ingredients

  • 1 package Spice Cake Mix
  • 1/2 cup All-Purpose Flour
  • 1/2 cup Brown Sugar
  • 1 tsp ground Ginger
  • 1 tsp ground Cinnamon
  • 1/2 tsp ground Nutmeg
  • 1 cup Sour Cream
  • 1/2 cup Buttermilk
  • 3 Large Eggs (room temperature)
  • 1/2 cup Molasses


Instructions

  1. Preheat your oven to 350°F (175°C) and thoroughly grease a 9×13-inch baking pan with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the spice cake mix, all-purpose flour, brown sugar, ginger, cinnamon, and nutmeg until well combined and free of lumps.
  3. In a separate small bowl, whisk together the room-temperature eggs and buttermilk until smooth.
  4. Add the egg mixture, sour cream, and molasses to the dry ingredients in the large bowl.
  5. Gently stir the batter by hand using a spatula or wooden spoon until just smooth, being careful not to overwork the gluten.
  6. Pour the batter into the prepared pan and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Place the pan on a wire rack and allow the cake to cool completely before adding frosting or powdered sugar.

To ensure a perfectly smooth batter, allow your eggs and dairy to reach room temperature before mixing. If you prefer a more intense ginger profile, consider adding a tablespoon of freshly grated ginger to the dry mix.
